What would be a typical asparagus recipe from Texas? Mark went for an homage to the German roots of the American people and decided to modernize the famous hotdog with a sexy touch of asparagus. Spiced up by an asparagus relish and an asparagus mustard, your smoked sausage has never tasted so fresh!

- 1 onion
- ½ red bell pepper
- 1 bunch of asparagus
- 1 ½ tablespoon of salt
- 2 tablespoon of sugar
- 1 cup of vinegar
- 1 teaspoon celery seed
- ½ teaspoon cornflour
Dice all the vegetables finely and salt it over night.
Combine the remaining infredients except for corn flour and bring to a boil.
In a bowl mix corn flour with watr to make a slury before you add it to the mixture.
Take it off the heat and pour it over the vegetables.
- 1 small bunch of white asparagus
- 1 tablespoon sugar
- 1 tablespoon salt
- 2 tablespoons flour
- 2 tablespoons garlic powder
- ¼ cup white wine vinegar
- ¼ mustard oil
- ¼ cup dehydrated white asparagus
- 2 tablespoons mustard seeds
Blanch the white asparagus and puree them. Add sugar, salt, mustard powder and garlic powder to the warm puree. Mix flour and vinegar to a slury and add it.
Slowly add the oil to combine. Finish with a powder of dehydrated asparagus.
Use the relish ans mustard as a topping on your favorite hot dog.
Being raised in Texas it is very clear the impact that the German immigrants had on the culture. Either form the sausages, smoked meats and the side salads to all the roads and towns with german names. I came to Berlin to explore this connection even further. As a boy and still to this day I have fond memories of cooking and eating hot dogs in the summer time. Barbecuing with friends in the park, going to the ballpark to see a game or celebrating fourth of July with one. It always seems to symbolise good times with friends and family. I wanted to highlight the condiments that play a big role in complementing the hot dog. I have included a sweet asparagus relish, a dill pickle asparagus, and a white asparagus mustard.
