- 1/2 cube yeast
- 1 pinch of salt
- 4 tbsp of olive oil
- 100 mL lukewarm water
- 150 mL beetroot juice (you can use the juice from the beets bag or buy a bottle of beetroot juice)
TOPPINGS FOR THE PINK PIZZA
- 2 sliced medium beetroots
- a bunch of fresh asparagus or a can of pre-cooked asparagus
- 3 tbsp of green pesto
- a hand of cherry tomatoes, cut in halves
- some goat cheese
HOW TO BAKE A PINK PIZZA WITH BEETROOT AND ASPARAGUS
Give the flour into a bowl and make a well in the middle.
Crumble the yeast and add it in the well with some salt. Pour then the oil, the water and the beet juice.
Knead with flour-dusted hands until you obtain a smooth and springy pink dough.
Place your dough in a bowl, sprinkle a bit of flour on the top and leave it to rest in a warm room for at least 30 minutes. The dough will double in size.
Place your dough on a flour-dusted surface and roll it into rough circles about 0.5 to 1cm thick.
Thinly spread the pesto, then add the slices of beetroot, the cherry tomatoes and the asparagus. If those are fresh, cook them just 5 minutes in boiling water before. Crumble the fresh goat cheese on top of it, and put in a 250C preheated oven for 10 minutes.
Enjoy!
